Carrot laddu is a very easiest and tasty instant laddu we can prepare in jiffi. As the name says the main ingredient of this laddu is carrot. In this recipe to make the process of making fast I have used milk khoya/kova instead of milk. So we can make it in very less time.

CARROT LADDU

INGREDIENTS:
2 cups grated carrots
2 tablespoon ghee
Few cashews and almonds
1 cup unsweetened khoya
1/2 cup sugar
1/2 teaspoon cardamom powder

PREPARATION:
Chop the cashews and almonds into small pieces.
Prepare the cardamom powder and keep it ready.
METHOD:
In a heavy bottomed pan take a teaspoon of ghee and roast the nuts in low flame till they becomes golden brown.
Remove the roasted nuts from heat and keep them aside.
In the same pan add 1 tablespoon of ghee and let it melt.
Then add the grated carrots and saute it in low flame.
Stir continuously with the ladle to avoid burning at thte bottom.
Add little more ghee if required.
Also be sure the flame should be low.
Once the carrots got cooked soft and becomes pale in colour, add the sugar.
Stir continuously till the sugar melt and combined with carrot.
Then add the unsweetened khoya and stir till the khoya becomes soft and well combined with carrot.
Once everything comes together , add the roasted nuts and cardamom powder.
Mix well.
Let the mixture too cool down a bit.
Then grease your hands with ghee and make laddus.
NOTES:
- Adjust the sweetness by adding/reducing the sugar.
- Instead of sugar you can even add condensed milk or jaggery too
- Using khoya gives nice rich tastier laddus.
- While making laddus , grease your hands with ghee in case the laddu is sticky.
- If the laddu is stickier while rolling(may be sticky if condensed milk is used) add milk powder(dry milk)and mix well.
