Lauki Ki kheer is one of a easy
kheer/paayasam recipe prepared using bottle gourd(Lauki/Suraikaai). It is so
simple to make and tastes great. It is so rich and yummy dessert.
I have first tasted at my neighbour’s place and really liked it so much. It was around 1 year before. That time onwards, i want to try this kheer, and one fine day tried this kheer. It was so good and we liked this very much.

At first I added little green color to the
kheer, but I felt that some what the real taste and look got changed. So this
time I didn’t add the color. if you wants you can add a little green colour
too.
OK, now let’s move on to this recipe.
LAUKI KI KHEER(BOTTLE GOURD KHEER)

INGREDIENTS:
2 cup milk
½ cup grated bottle gourd
½ cup minus 2 tablespoon sugar
¼ cup unsweetened Khoya

to 10 almonds
8
to 10 cashews
Few
pistachios
2 teaspoon ghee
2
or 3 cardamoms
1
teaspoon rose water
PREPARATION:
Wash and peel the skin of the bottle gourd.
Grate the bottle gourd and keep it
aside.
Soak the almonds in hot water for
around 10 minutes. Then peel the skin.
Chop the soaked almonds, cashews and
pistachios into fine pieces and set aside.
Crush the cardamoms and set aside.
METHOD:
In a pan add the ghee and let it heat. Then
add the grated bottle gourd and sauté well till the water is completely dried
out.
Then add the milk and let it boil.
Then add the sugar and mix well.
Let the milk and bottle gourd to boil
till the milk is reduced and the kheer becomes thick.
Then add the chopped nuts, cardamom and
khoya and mix well.
Once the kheer reaches the required
consistency, switch off the heat.
Then add the rose water and mix well.
Serve chill or warm as you wish.
NOTES:
- Instead of sugar you can use condensed milk to get richer taste and creamier.
- You can fry the nuts in ghee and can add. But, I like the soaked and chopped nuts.
- Adding khoya gives nice rich taste to the kheer.
- If you like, you can add little green colour to the kheer.
- Instead of crushed cardamom you can add cardamom powder too.
