Tomato rice is very simple variety rice. It is perfect
to pack for lunch box. Actually we can prepare tomato rice as one pot dish. But
traditionally we make tomato masala first and then will mix with the rice.
Here am giving the recipe of second way only. You can
mix the tomato masala with leftover rice also. But the rice should be fluffy
and not mushy.
OK, now let’s move on to this recipe.
TOMATO RICE

INGREDIENTS:

cup cooked rice
3
medium tomatoes
1
big onion
2 green chillies
2 green chillies

or 4 garlic pods
Few
curry leaves
¼
teaspoon turmeric powder
½
teaspoon sambhar masala powder
Salt
to taste
To
temper:
1
tablespoon oil
½
teaspoon mustard seeds
1
tablespoon channa dhal
½
tablespoon urad dhal
¼
teaspoon asafetida
PREPARATION:
Finely chop the onion and tomatoes and
keep them ready.
Finely chop the garlic and set aside.
METHOD:
In a pan add oil and let it heat. Add
mustard seeds and let them splutter.
Then add the channa dhal and urad dhal
and saute well.
Once the dhals starts to change the
colour, add the chopped onion and green chillies and saute till onion becomes
translucent. Add curry leaves and saute.
Then add asafetida and chopped
toamatoes and saute well.
Add turmeric powder and sambhar powder
and saute well.
Add required salt and mix well.
Close the pan with a lid and let the
tomatoes to cook until it becomes mushy.
Then remove from heat and add the
prepared masala to the fluffy warm/cold rice.
Mix well and serve with any spicy fry
or simple chips/papad.
NOTES:
- You can skip garlic, but it gives nice flavour to the rice.
- Adding sambhar powder makes the masala thick and right consistency to mix with rice. Don’t add more.
