Fried rice is a favourite Chinese recipe favourite for
most of us. It is so simple to make yet delicious rice.
Actually till few years back ie., before my marriage,
I didn’t even know that we can make fried rice in home, and though it is
something difficult to prepare. Later on while seeing the recipe I got
surprised and it is that much easy to make.
But few things need to take care while making this
fried rice to get perfect flavoured tasty rice. At the beginning, I have added
more soy sauce which affected the taste and also the colour of the rice.
Similarly vinegar too.
So later on, identified my mistakes and able to do
almost perfect fried rice without ajinamoto. Actually I have never ever
brought/used ajinamoto, though it enhances the taste and flavour of the recipes
because of its health effects.
VEGETABLEFRIED RICE

INGREDIENTS:

cup cooked rice
1
cups mixed vegetables *
1
tablespoon olive oil
1
tablespoon chopped spring onion white
2
tablespoons chopped spring onion green
3
garlic pods
1
teaspoon soy sauce
1
teaspoon vinegar
1
teaspoon pepper powder
Salt
to taste
*I
used carrots, beans , cabbage ad capsicum
PREPARATION:
Finely chop the spring onion white and
green part and keep it aside.
Finely chop the garlic and set aside.
Soak the basmati rice in water for 20
minutes. Then cook the rice till it fluffy and let it cool down.
METHOD:
In a pan add oil and let it heat. Add
the chopped garlic and spring onion white part. Saute well.
Then add the chopped veggies and saute
in high flame. No need to add water. Saute in the oil itself without burning
them. Add salt and saute.
After 2 minutes, when the veggies are
almost cooked, but have to retain its crunchiness, add the vinegar and soy
sauce. Stir well.
Then add the boiled basmati rice and
mix well.
Finally add the pepper powder and mix
well.
Then add the spring onion green part
and stir well.
Serve hot with simple tomato sauce/green
chilli sauce or with any Chinese gravy of your choice.
NOTES:
The rice should be fluffy and not
mushy.
Adding more soy sauce and vinegar will
spoil the taste and colour.
You can even add mushroom/sweet
corn/peas along with other vegetables.
Sauting the vegetables in high heat
will give nice smoky flavor to the fried rice.
Cruchy vegetables will give great taste
to the fried rice.
