Rice flour is very common in south indian cooking. We can
make varius savouries and sweets with the rice flour.
If we prepare the rice flour in bulk we can grind the
cleaned washed and dried rice in mill.
In this post I have given the way of making fresh rice
flour in home, which we mostly used to prepare the dishes for neivethiyam to
offer to god.
For general purpose you can wash the raw rice(pacha
arisi) and then drain the water completely.
Dry the washed rice under sunlight till all the
moisture is gone. Then grind it in the rice mill as a smooth powder.
Store in a sir tight container and use whenever
required.
We can make kozhukkattais and savouries like murukku,
pakoda etc., with this rice flour. Also can be used in our daily cooking in
curries(kuzhambu) as thickening agent.
OK, now let’s move on to this recipe of making fresh
home made rice flour.
HOME MADE RICE FLOUR

SERVES: 20 ADAIS (APPROX.)
INGREDIENTS:

cup Raw rice(pacha arisi)
Water
as required
METHOD:
Wash and Soak the rice in water for
around 1 hour.
Then drain the water completely.
Spread the drained rice in a white
cloth and let it dry under the sunshade or
fan till the moisture is completely goes off.
Once the rice is dried grind it into
smooth powder using mixer grinder.
Then seive the ground powder to remove
the coarse rice.
Again grind the coarse rice powder and
sieve to get the smooth rice flour.
Similarly do untill all the rice is
ground into smooth rice powder.
Now the rice flour is ready, but it
will be having little moisture with it.
So to remove the moisture we need to
roast in pan.
Roast the rice flour in a pan for 3 to
5 minutes in low midium flame until all the moisture is removed, and the rice
flour will become dry and you can able to draw aline with out breaking.
Cool the roasted rice flour and store
in a airtight container.
NOTES:
- Seiving the rice flour is very important to get nice smooth powder.
- If the rice is having more moisture it will be little difficult to grind it into smooth.
- Roasting the rice flour will remove the moisture content in the flour.
- This rice flour can be used to make kozhukkattais, idiyappam, karadaiyaam nonbu adai etc.,
