OATS VADA/OATS MASALA VADA/ HOW TO MAKE OATS VADA

Oats vadai is a yummy crispy snack recipe. Vadai is such a paopular recipe in south india. We make variety of vadais like medu vadai, masala vadai keerai vadai etc.,
I have posted few vadai recipes here in our blog. Please check if you are interested.
Today I am posting another delicious vadai using oats and channa dhal. It is so healthy kids friendly snack to munch on.
OATS VADA/OATS MASALA VADA/ HOW TO MAKE OATS VADA

As the  name says the main ingredient for this vadai/vada is oats.
I have used 1 cup oats for ¼ channa dhal. We can also use ½ cup or ¾ cup of oats too. I have tried and liked all the three ratios.
Today I have used whole oats, you ccan use instant oats too.

Ok now coming to the recipe.
Oats Masala Vada/Vadai
SOAKING TIME: 2 hrs| PREPARATION TIME: 10 mins | COOKING TIME: 15 mins
OATS VADA/OATS MASALA VADA/ HOW TO MAKE OATS VADA

YIELDS:  10 MEDIUM VADAS

INGREDIENTS:
           
                        1 cup Whole oats/3/4 th cup instant oats)
                        ¼ cup channa dhal
                        1 medium onion
                        ½ tablespoon fennel seeds (perunjeeragam)
                        6 cloves garlic
                        ¼ teaspoon asafetida
                        1 teaspoon salt (approx.)
                        4 red chillies
                        Oil to fry the vada
                        Few Curry leaves
                                              
PREPARATION:
Wash and then soak the channa dhal in water for minimum 2 hours.
Finely chop the onion and keep it ready.

METHOD:
Drain the water from the channa dhal and grind it into coarse mixture with red chillies, and salt in a mixer grinder or food processor.
Don’t add water to grind the dhal.
Then add the oats, garlic and fennel seeds and grind into coarse. Just give 2 or 3 pulses to grind the oats.
Don’t make it into smooth paste.
Then take the grind mixture from the mixer jar/food processor in a bowl.
Now add the finely chopped onion and curry leaves.Mix well. Add asafetida powder or asafetida soaked water.
Mix every thing well.
Now if the mixture is too dry add 2 or 3 tablespoon of water and mix well.
Now our oats vada batter is ready.
Heat oil in a shallow pan.
Take a lemon size vada batter and flatten it by placing it in between the palms.
Drop the vada one by one and let it cook in medium heat. Otherwise the outside will become brown and inside will remain uncooked.
Flip the vadas in between using a ladle to make it cook even.
Once the vadas are cooked fully remove from the oil and serve.

NOTES:
Don’t grind the vada batter into smooth paste.
Add water only if the batter is too dry.
Finely chop the onion otherwise it will be difficult to shape the vada.
Wet your hands to flatten the vada without sticking in the hands.
You can even add shredded carrots too in this vada.

Chocolate wheat butter cookies is a very easy healthy recipe. It is a kids friendly recipe. I have used butter in this recipe and it gives such a great flavor to the cookies. In the same way we can make vanilla cookies too. I will post in a separate post.

Ok now coming to the recipe.
Eggless Whole Wheat Chocolate Cookies

EGGLESS WHOLE WHEAT CHOCOLATE COOKIES/ EASY CHOCOLATE COOKIE RECIPE/ HOW TO MAKE EGGLESS CHOCOLATE COOKIES

YIELDS:  12 COOKIES

INGREDIENTS:
           
            1 cup whole wheat flour
            ½ cup butter
            ½ cup powdered sugar
            ¼ tsp baking soda
            ¼ cup cocoa powder
            1 or 2 tablespoon milk (as required)
            ¼ cup chocolate chips
            A pinch of salt
                        
PREPARATION:
Gather all the ingredients and keep it ready.
All the ingredients should be in room temperature.
Preheat the oven for 10 minutes at 160 degree centigrade.

METHOD:
In a bowl take flour , baking soda, cocoa powder and salt and mix well with a whisk.
You can sieve this for 1 or 2 times to make everything combine well.
In another bowl whisk the butter and sugar well, till it becomes pale and fluffy.
You can use electiric beater or hand whisk to beat.
Then add the flour little by little in the butter sugar mixture.
Mix with a spatula .now the mixture will be little crumbly, so add  or 2 tablespoon of milk (as per the need) and mix well with hand.
Finally add the chocolate chips add mix well.
Once it becomes like chapathi dough, divide it into equal sized balls.
Flatten each ball a little (around ½ inch thick) and keep it in a greased baking tray or butter paper lined tray.
Don’t over crowd the plate and give enough space to let them expand.
Bake the cookies in a preheated oven for 20 minutes in 160 degree Centigrade.
Once the cookies are baked remove the tray from the oven and let it cool down completely.
Now delicious healthy chocolate cookies are ready to munch.
You can store the cookies in a air tight container in room temperature.

NOTES:
All the ingredients should be in room temperature.
Baking time may vary for the ovens, so check for the doneness after 20 minutes.
These cookies will be soft and sometimes look like undercooked while hot, once it cooled down it will become crisp.
You can store the dough in refrigerator also till the first batch is baked.
You can even replace the wheat flour with all purpose flour if you want.
Using powdered sugar gives nice and even taste to the cookies.
Beating the butter and sugar till pale and fluffy is important to get nice crispy cookies, otherwise it may get hard sometimes.
You can even make this cookies in stove top too.

Parsely Butter rice is such a easy rice, that can be prepared in very less time. It requires very less ingredients which are easily available in home.
It is so healthy less spicy rice variety , perfect to pack in lunch box too.

SERVES:  2 PERSONS

INGREDIENTS:
           
                        1 cup Cooked rice
                        1 tablespoon butter
                        5 or 6 garlic pods
                        2 green chillies
                        1 cup tightly packed chopped parsely leaves
                        1 medium sized onion
                        ½ teaspoon salt(approx.)
                                   
PREPARATION:
Peel and finely finely chop the garlic.
Cook the rice and let it cool down.
Finely chop the green chillies and onion and keep it ready.
Wash and clean parsely leaves and then chop them finely.


METHOD:
In a pan add butter and let it heat.
Then add the chopped garlic and sauté well. Then add the chopped green chillies.
Then add the finely chopped onion. Add required salt and sauté well till onion becomes translucent.
Then add the chopped parsely leaves and sauté for 2minutes,.
Then add the cooked rice and mix well.
Check for salt and adjust.
Serve hot with any spicy side dish like paneer masala, mushroom masala etc.,

NOTES:
Don’t make the rice to be mushy.
Chopping the garlic, onion, parsely leaves into fine is very important.
