Here in this recipe I have used red rice to make the puttu. Instead of red rice, white raw rice can also be used.

This puttu can be prepared using puttu mould or directly we can prepare using our idly pot too.
Ok now coming to the recipe.
Red rice puttu
SOAKING TIME: 1 hour | PREPARATION TIME: 10 mins | COOKING TIME: 10 mins

INGREDIENTS:
2 cup red rice
1 teaspoon salt
Coconut as required
Water as required

PREPARATION:
Wash and Soak the rice in water for around 1 hour.
METHOD:
Drain the water from the rice completely
Then grind into smooth powder with out adding water.
Add salt and grind once again for easy mixing.
Then fill the puttu kuzhal with rice flour and coconut in between and slightly press with the spoon.
Heat the water in the bottome container.
Place the puttu kuzhal and cook till the steam comes out from the top .
Then remove carefully from the mould and serve hot with any curry/gravy.
To make in idly pot, boil water and then place the idly plate and steam cook for 10 minutes.
serve hot ..
NOTES:
I have used broken red rice, so soaking for around 60 minutes was enough, while using regular rice you can soak it up to 2 hrs for easy grinding.
Drain the water completely from the rice, then only the flour will come in right consistency after grinding.
If you want you can seive the rice flour after grinding. But not necessary.
If
If you make ball it should hold the shape, and while pressing, it should break and have to become crumble.
In case if you prepared the flour in large quantity dry roast the gound flour for some time (till all the moisture goes off)and then store in a air tight bottle for future use.
while using this roasted flour, sprinkle some warm water and mix well to get the right consistency (as shown in the video)
In case the ground flour is too dry , that time too splrinkle some warm water and mix.
If you add hot water, lumps will be formed and the puttu wont be smooth and soft.
As we are serving with some spicy side dish no need to add more salt while grinding.
In the same raw rice(white rice) puttu can also be made.
The amount of grated coocnut is purely per our wish.
Dont grate the coocnut till its brown part for nice bright white color in between.
While steam cooking the puttu, dont fill above 1/2 of the container with water, it may spill outside while boiling.
Dont press the flour/coconut too tightly otheriwse puttu will take more time to get cook, and also will be little hard to break., in the mean time it should not be too loose, otherwise the puttu will not hold its shape while demoulding from the kuzhal(Mould).
In method 2 just showed the serving option in kuzha puttu sahpe in case of unavailability of puttu kuzhal..
