Aval payasam is a healthy kheer/payasam
perfect to make for poojas/ guest visits. The main ingredient to make this
kheer/paayasam is aval/poha/flattened rice.
In our house my mom & mil makes very
few varieties of payasam only (semiya payasam, javarisi(Sago) payasam,
arisi(rice payasam) for neivethiyams or for guests. Generally if we make
payasam & vada means there should be something special :). This aval
payasam is one among them. They both(mom & mami) will use very little milk
and the payasam will be of thicker in consistency like we can serve in banana
leaf/plate and can eat with hand itself. Yes. Nowadays this payasam is served as
thinner in consistency and served in glasses or cups in most of the places even
in marriages too. In fact am also preparing the payasam as thinner in
consistency by adding more milk, because majority of our guests are also likes
to eat the payasam in cups at last after finishing the lunch like dessert. But
in our south indian menu, it should be served between rasam and buttermilk.
Here in this recipe I have used sugar for
sweetness. But we can make it healthier by using jaggery. I will post that
recipe too in future as soon as possible.

AVAL PAYASAM/KHEER
SOAKING TIME: - | PREPARATION TIME: 5 MINS | COOKING TIME: 10 MIN

SERVES: 3 PERSONS
INGREDIENTS:
½
cup aval/poha
½
cup -1 tablespoon sugar
3
cup water
½
cup milk
Few
cashews
Few
dry grapes
1
teaspoon ghee
2
cardamoms
1
tablespoon condensed milk(optional)
PREPARATION:
Chop cashews into small pieces and set
aside.
Crush /powder the cardamoms and set
aside
Boil the milk and keep it ready.
METHOD:
In a pan add ghee and roast the cashews
and dry grapes and set aside.
In the same pan add the aval/poha and
roast well till it starts changes its color.
Once the poha got roasted remove it
from heat and let it cool.
Then grind into coarse (just give 1 or
2 pulses) in a mixer grinder.
In a pan take water and let it heat. Once
it starts boiling add the ground poha and mix well.
Let it cook well in low medium flame
and stir occasionally to avoid burning at the bottom.
Once the aval got cooked well, add
sugar and mix well.
Let it boil for few more minutes.
Add the boiled milk and stir.
Finally add the roasted cashews, dry
grapes and cardamom powder and condensed milk and mix.
Serve hot or warm!!
NOTES:
- Be careful while roasting the poha, as it may get burnt soon.
- Don’t grind poha into smooth powder, it should be coarse.
- The amount of milk is up to your choice i.e., depends on the required consistency add milk.
- Instead of crushed cardamoms you can add cardamom powder too.
- I have reduced a tablespoon of sugar as I have added the condensed milk for rich taste. You can omit the condensed milk and add ½ cup sugar fully.
