SPRING ONION ALMONDS PULAO - RICE VARIETIES

Spring onion pulao is a very easy less spicy scrumptious rice recipe.

This recipe doesn’t require any vegetables or more ingredients. It is so simple to prepare and yummy to pair it up with any spicy gravies.

Few days before I had lot of spring onions in hand, so checked my cookbook collections and found this recipe. It was so easy, so prepared it for my daughter’s lunch with simple raita. As we liked it so much, again I prepared for my blog.

VEGETABLE MASALA WHEAT NOODLES- INDIAN STYLE

Vegetable masala wheat noodles is a scrumptious healthy noodles. I have used home made wheat noodles to prepare this excellent dish. We can call this as wheat idiyappam also.
Generally noodles will be the favorite of most people, obviously we too. In our family we all three love noodles, that too instant noodlesJ. We know it is not good for health but we like that taste. But we don’t like the plain noodles with the spice powder which comes with the instant noodles. So I always prepare the noodles with vegetables only.So I followed the same way which I prepare for normal noodles. But instead of ready made noodles I prepared the home made wheat noodles. Actually this idea was given by my friends manobala and kanimozhi. Thanks dears J. While speaking about the recipes they told this idea and asked me to try. I first tried with a very small amount of flour and it was really great. Then I prepared this for our dinner and my kid and hubby loved this lot. We enjoyed whole heartedly without any guilt JSo do try this recipe and revert me how it turned out for you.

Ok now coming to the recipe.
VEGETABLE MASALA WHEAT NOODLES
RECIPE TYPE: MAIN | CUISINE: FUSION | SERVES: 3 PERSONS
PREPARATION TIME: 10 MIN | COOKING TIME: 30 MIN

VEGETABLE MASALA WHEAT NOODLES- INDIAN STYLE

METHOD:
Chop the vegetables and keep aside. Chop the sprin onion white part and green part separately.
Dry roast the wheat flour for around 5 to 6 minutes till nice aroma comes. But be careful not to burn.

Then switch of the stove. Mix salt in little hot water and add to the flour. Then add the hot water little by little and mix well with a spatula.


Then let it cool for 2 to minutes. Then make nice dough using hands.
Grease the mrukku ural ,idiyappam  achu and idly plate with oil.

Fill the murukku ural with the prepared dough and prepare the noodles/idiyaappam.
Cook in the steam for 5 to 10 minutes.

Then let the cooked noodles to cool down completely.

In a heavy bottomed pan add olive oil. Once it becomes hot add the cinnamon, cloves and cardamom. Let them fry.
 Then add chopped spring onion white part and onion and sauté till the onion becomes translucent. Then add ginger garlic paste and saute.

Add tomatoes and sauté well. Then add the coriander powder, red chilli powder, and garam masala powder 


Then add and noodles masala powder and sauté well. Then add the vegetables , salt and stir for few minutes.


Add water and let the vegetables to cook. Once the vegetables cooked well, then add paneer and pepper powder.

Add coriander leaves and spring onion green part and mix.

Add the prepared wheat noodles/idiyappam and mix well.

Serve hot with tomato ketchup.

NOTES:
  • Dry roasting the wheat flour is very important to get soft noodles and to avoid the stickiness.
  • Use hot water only to prepare the dough. 
  • While preparing the dough dont add more water, because if the dough is too thin or sticky , because thick dough only will give long and non-sticky noodles.
  • While hot the noodles may look sticky. But after cooled down it will become fine.
  • You can add or remove any of the vegetables.
  • Adding garam masala is optional.
  • If you don’t have noodles masala then adding garam masala is enough.

IDLY CUTLET - LEFT OVER IDLY RECIPE

Idly cutlet is one of the simple snack recipe using the left over idlys. Generally we make idly upma using leftover idlys. But this idly cutlet is very different tasty snack that can be made in very less time.
Actullay I got this idea of making cutlet using idly from a story, yes J story only. Long back ie., during my school days I read story which is having a moral like in any situation we should nt lose our hope, from every failure there is a new beginning. I try to tell that in short here.
In a village one small hotel was there. Once some festival in the local temple of that village. So that hotel owner prepared lot of idlys to sell, as he expects more people from nearby villages also will visit the temple. But at the end of the day, the idlies didn’t go as he expected. He was little upset of the loss. But he didn’t lose his confidence. He prepared idly upma out of that idlies and included that in the menu for next day breakfast. Somehow it got sold, but still some leftover upma was there. So he prepared vada out of that leftover for evening breakfast. Like that that story goes. 
I liked that idea of making vada. So tried this cutlet with the leftover idlys one day, it was really great, and my husband didn’t find out what I used as base for this cutletJ.

METHOD:
Finely chop the onion, tomato, green chillies, coriander leaves and mint leaves and keep aside.
Mix the maida and water and make a  thin batter and keep aside.

Dip the idly in water and squeeze the water. Then crumble the idly using fingers, don’t make it mushy.


Add the chopped onion, tomatoes, green chillies, coriander leaves and mint leaves and mix well.
Add the red chilli powder salt, and garam masala powder and mix well.



Then make equal sized balls and make them as flat patties using the palms.

 Then dip them maida mix and then coat with bread crumbs.


In a pan add oil and cook the prepared patties in medium flame. Flip and cook both the sides till it becomes golden brown.

Remove from heat and serve hot with tomato ketchup or any other dip/chutney of your choice.

NOTES:
  • The water comes from onion and tomatoes will be enough to make perfect dough. If you it is not coming together properly you can add boiled and mashed potato or bread crumbs.
  • As the idly already having salt, be careful while adding salt.
  • You can add amchur(mango) powder and chat masala for different flavor and taste.
  • You can deep fry the cutlets, but add couple of tablespoon of maida or corn flour with the prepared dough, to avoid the breaking of cutlets.
  • You can avid green chillies and add one more teaspoon of red chilli powder for spiciness.
  • while cooking the flame should be medium low, otherwise the onion and tomatoes wont be cooked well.

VEGETABLE SPRING ROLL DHOSAI/DOSA

Spring roll dhosai/dosa is my all time favourite dhosai variety. it is definitely a fusion of south Indian and Chinese recipe. The name itself defines this dhosa, yes, it nothing nothing but the dhosa stuffed with sauted vegetables with the sauces.
Actually I first tasted this dhosai in a nearby hotel of my house. While in the first time itself I liked it much and I always eat this dhosai only whenever we choose that hotel for our dinner.

SPRING ROLL DHOSAI/DOSA
RECIPE TYPE: MAIN | CUISINE: SOUTH INDIAN (FUSION) | YIELDS: 2 PERSONS|
PREPARATION TIME: 5 MIN | COOKING TIME: 20 MIN

VEGETABLE SPRING ROLL DHOSAI/DOSA - EASY DOSA RECIPES
                                                                                                         
METHOD:
Chop the vegetables and keep aside. Chop the white part and green part of the spring onions separately. Finely chop the ginger and garlic separately and keep aside.
In a heavy bottomed pan add olive oil. Once the oil becomes hot add the ginger and garlic and sauté well.

Then add the chopped spring onion white part and chopped onion and sauté.

Once the onion becomes translucent add the chopped vegetables and sauté well in high heat.
Add required salt and sauté well. No need to add water. Water comes from the vegetables will be enough to cook.

Once vegetables becomes half cooked add the soya sauce and chilli sauce and mix well.
At the end add the pepper powder and mix well.

At the end add the chopped coriander leaves and spring onion green part and mix well.
Let the vegetable masala to cool.

Heat the dosa tawa and pour a ladle ful of idly batter and spread as thin dosa.
Sprinkle some oil and close it with a lid and let it cook in medium flame.


After few minutes, open th lid and spread the prepared vegetable masala and close it with both the sides of the dosa.



Cut into two parts and serve hot with the onion chilly dip.

It tastes heavenly with the dip, or you can serve simply with the gun powder (idly podi) or any of your choice.

  • The vegetables should be crunchy, no need to cook till soft.
  • The water from the vegetables itself will be enough to cook.
  • You can chop the vegetables in any form as per your wish.
