Banana stem is one of the wonderful vegetable having good amount of health benefits. taking banana stem at least once in a week is very important. In this post am giving the recipe of banana stem buttermilk. Buttermilk is very good to take in summer season to reduce he body heat. So I prepared this banana stem buttermilk with little spices to improve its taste.
We can take banana stem into our food in variety of ways like poriyal , kootu etc., I have already posted a cutlet using banana stem which is a tasty way to include banana in kids snacks. Similarly this buttermilk will also be a great thirst quencher and also a healthy drink for this summer season.

INGREDIENTS:
  • 1 cup chopped Banana stem
  • 2 cups buttermilk
  • 1 green chilli
  • 1 or 2 springs coriander leaves
  • few curry leaves
  • 1 inch piece ginger
  • Salt to taste


PREPARATION:
First clean the banana stem and chop it roughly.
Peel the skin of ginger and chop roughly and set aside.
Clean and finely chop the coriander leaves and curry leaves and keep it aside.
Beat the buttermilk (mor) and mix with enough water and set aside.

METHOD:
Grind the cleaned banana stem, green chillies and ginger into smooth paste by adding buttermilk.
Then mix the ground paste with buttermilk.
Add salt and chopped coriander leaves and curry leaves and mix well.
Serve in the kalayam or glas as per your wish.

VARIATION:
  • If you want you can simply add the banana stem juice only with the salted buttermilk and drink.
  • Adding little hing will give additional taste to the buttermilk.
  • You can add few lemon leaves also while grinding to make it more flavourful.

NOTES:
  • Instead of adding the banana stem paste, you can grind it with water and extract the juice and then add with the buttermilk. In case if you want to filter you can grind them as coarse paste to make the filtering process easy.
  • You can use few ice cubes also or use chilled buttermilk, but personally I don’t like to add ice cubes or use chilled buttermilk.  Instead I will use my small mud pot(Kalayam) to serve the buttermilk, which gives natural chillness to the buttermilk.
