Bubble tea is one of the varieties of iced tea with milk. It is nothing but the cold tea with milk having bubbles/Boba. It is also called as pearl milk tea or boba milk tea. It is a originated from taiwan in 1980's and later spread popular all over the world.(Source-wikipedia). Bobas are the main ingredient of this tea and hence the name bubble tea. Bobas are the chewy toipica balls. With these bubbles we can make variety of teas like bubble green tea, and various fruit juices and shakes with bobas.
Generally milk powder or dairy creamer will be used with brewed tea to make this bubble tea. Or simply we can use chilled milk with tea extract.

I first tasted this bubble tea in Mr. Café Dainty in a mall and loved it in the first sip itself. I like to eat that chewy tapioca balls which comes through the bubble tea straw, which is a special straw widely available in markets to serve with bubble teas or bubble shakes/juices.

Sometimes suddenly I crave for this bubble tea, and can’t go to the mall for that. So I tried to use our sabudana/sago to make this tea instead of the bobas. Because I can’t find these bobas in grocery shops, though it is mentioned in internet as it is available in Asian markets.

So then I searched the recipe for making of bobas. I found one recipe I instructables to make the boba. So immediately I brought the tapioca flour and tried this yummy bubble tea. Actually I didn’t expect that it tastes exactly same as we taste in the café shop.
The only difficult thing in making bobas is making of small balls. Other than that all the steps are simple and can make in jiffy.

INGREDIENTS:
                         1 Cup milk
                        4 table spoon boba
                        ¼ cup brown sugar
                        ¼ + 1 cup water
                        2 tablespoon tea powder
                        Ice cubes as required
                                          
PREPARATION:
Prepare the bobas and keep it soaked in the brown sugar sauce.
Boil the milk and let it cool down.

METHOD: 
In a pan add the 1 cup of water and allow it to boil. Once it starts boiling add the tea powder and let it continue boiling.
After 3 to 5 minutes or after the tea fully cooked and the color and flavor of the tea is fully infused in water remove from heat and filter.
Keep the tea extract/decoction aside and allow it to cool.
Then again boil the remaining ¼ cup water and add the brown sugar and mix well. Once the brown sugar got dissolved and the mixture starts boiling remove the sugar syrup from heat and let it cool down.
In a serving bowl add 2 tablespoon of bobas , sugar sauce, required tea extract, and the milk. Mix well. Add the ice cubes and serve the chill bubble tea.

NOTES:
  • In shops the bubbles will look black colour, but in homemade, the bobas will be light brown only.
  • You can use white sugar also instead of brown sugar. But to give light brown colour I have used brown sugar as per the original recipe.
  • I just took required brown sugar sauce before adding the bobas with the syrup for cooking.
  • You can prepare the bobas, sugar syrup and tea extract in advance and mix everything just before serving for guest visits.
  • To make it creamier you can blend everything with ice cubes except bobas and pour in the serving glass. Finally add the bobas and serve.
  • Instead of milk you can use milk creamer or milk powder also.
  • Bobas will stay good for 2 days in sugar syrup itself, but softer if you use immediately. But it starts to become little harder and more chewy after few hours.
  • Instead of using tea powder, you can simply use the tea bag and brew the tea by dipping it in hot water.

In a serving bowl add 2 tablespoon of bobas , sugar sauce, required tea extract, and the milk.

Mix well. Add the ice cubes and serve the chill bubble tea.
