Carrot masala toast is a very healthy and easy breakfast /snack recipe. We can even make it as sandwiches too.
CARROT BREAD TOAST

INGREDIENTS:
2 cups grated carrot
1 medium capsicum(chopped)
1 mediu tomato(chopped)
1 medium onion(chopped)
1/4 cup sweet corn
2 small green chilis
1/4 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/2 teaspoon kashmiri chilli powder
1/2 teaspoon cumin powder
1 teaspoon gara masala powder
1/4 teaspoon chat masala powder
1 tablespoon tomato ketchup
Few curry leaves
Few coriander leaves(chopped)
1/2 teaspoon salt(or as needed)
1 tablespoon oil

PREPARATION:
Grate the carrots and keep it ready.
Chop the onions, tomatoes and capsicum.
METHOD:
In a heavy bottomed pan add oil and let it heat.
Add mustard and cumin seeds and let it splutter.
Add the onion, curry leaves, green chillies and salt. sauté well.
Then add the tomatoes and sauté till they become mushy.
Then add the spice powders (chilli powder, cumin powder, garam masala powder and chat masala powder).
Sauté till the raw smell goes off.
Then add the carrots capsicum and sweet corn .cover and let them cook.
Finally add the tomato ketchup and coriander leaves and mix well.
Toast the bread the slices into golden brown on both the sides.
Spread the prepared carrot masala on the bread slices.
Cut and serve ..
NOTES:
- you can adjust the amount of carrot as per your taste.
- Along with carrots other vegetables like pea, cabbage can also be added.
- you can even stuff the carrot masala between the bread and then toast in tawa or in toaster.
