Bread pakoda is an excellent snack recipe to
serve with evening tea. Generally we make pakoda by using the besan(channa dhal
flour) and onion. Here I have used bread as the main ingredient to make this
pakoda. It is really so crispy and yummy and you cann't even stop with one plate.
For sudden guests visits also you can
prepare this bread onion pakoda and am sure they will impress with its crispiness
and taste. Also you can use leftover bread to make this pakoda.
Usually if the bread is near to the expiry
date, I will keep the bread outside of the cover and prepare bread crumbs and
store in airtight bottle. In this recipe too, you can use bread
crumbs also.
Ok now coming to the recipe.
BREAD ONION PAKODA

INGREDIENTS:

bread slices
¼
cup rice flour
¼
cup roasted gram flour (Pottukadalai maavu)
1
teaspoon fennel seeds
5
or 6 cashew nuts
3
green chillies
1
medium sized onion
Few
curry leaves
2
or 3 strings coriander leaves
Salt
to taste
Water
as required (approx. 100 to 150 ml)
Oil
to deep fry
PREPARATION:
Grind the bread slices into fine
powder.
Finely chop the onion and green
chillies and set aside.
Similarly finely chop the coriander leaves
and curry leaves and keep it aside.
Break the cashews into small pieces
and set aside.
Crush the fennel seeds with mortar
and pestle.
METHOD:
In a wide bowl take the ground bread
crumbs, roasted gram flour, rice flour, onion, green chillies, curry leaves,
cashew nuts, salt, coriander leaves and mix well.
Sprinkle water little by little and
knead to make stiff dough.
In a pan add oil and let it heat.
Make small pakodas with the prepared
dough and deep fry in the oil in medium flame.
Once the pakodas got cooked and turns
into golden brown color, remove from oil and drain the excess oil in a tissue paper.
Serve hot with any chutney or simply
with ketchup. It tastes great even without any side dish.
NOTES:
You can use bread crumbs also.
You can add finely chopped ginger also for additional flavor.
Also you can add 1 or 2 tablespoon of roasted peanuts also along with cashew nuts.

Chilly bread is one of the easy snack recipe which can be made in jiffy. I just made this few days back for evening snack . It was really yummy and finished in few minutes:)
You can make this chilli bread with the left over breads also. It is nothing but bread sauted in a spicy sauce. That's it.
I used brown bread, but you can use any variety of bread as per your wish.
Cut the bread into small pieces . Chop the onion tomato, capsicum and the spring onion(green and white parts separately) and keep aside. chop ginger and garlic finely.
In a pan add 1/2 tbls oil or butter and saute the bread pieces. or sprinkle some oil on the bread pieces and bake in a preheated oven for 10 minutes or till they becomes crunchy. (I just baked the bread pieces)
In a pan /Kadai add remaining oil/butter. add the chopped ginger and garlic and saute well.
Then add spring onion white part and chopped onion and saute till translucent. Add the chopped tomato and saute till mushy.
Now add capsicum and saute, then add tomato ketchup , chilli sauce and soy sauce and saute for few minutes.
Add little water and salt and mix well and allow it to boil for few minutes.
Add the baked or fried bread pieces and mix till the masala coats well.
Finally add the chopped green part of the spring onion and serve hot.
NOTES:
Don't add to much water , because it will make the bread mushy. Adding water is just to make the masala coats well with the bread.
Sauting or baking the bread is very important to make the bread pieces crunchy.
As the sauces already having some salt, don't add too much salt.
Don't over cook the capsicum, crunchier capsicum will tastes good.

Vegetable masala bread sandwich is a different
snack or breakfast to our normal raw vegetable sandwiches. Generally I don’t like
raw vegetables in sandwich. Once I tasted this in a friend’s house and liked it
a lot. One sandwich itself will make you feel full. And no need to mention that
it is healthy too :).
In a kadai add a table spoon of
oil/butter and add onion. Sauté till it becomes translucent.
Then add tomatoes and ginger garlic
paste, sauté till the raw smell goes off.
Once the tomatoes are half cooked,
add the vegetables and sauté. Add required salt , chili powder, turmeric powder
and garam masala powder and sauté well.
Then add little water and close with
a lid. Let it cook fully.
Then add the tomato ketchup and mix
well. Switch off the stove and keep it aside.
Apply ghee or butter on the bread
slices and toast them on a tawa. Once the sides become brown, apply cheese on
one side and put prepared masala and close with toasted bread. You can apply
cheese on both the breads.
Serve hot.
NOTES:
You can use sandwich cheese slices
also instead of spreadable cheese.
Any of the vegetables can be reduced
and you can add half boiled and shredded cauliflower or broccoli also. Green peas
and sweet corn also can be added in to the masala.
If you want to avoid butter/ghee, you
can just sprinkle some water on the breads and toast.
You can adjust the spiciness by
adding or reducing the chili powder.
After applying the cheese you can heat the bread for one minute till the cheese to melt a little bit. but be careful, that the bread will burnt if the heat is high.
